Tikka Masala
Packs a punch!
RECIPE
Preparation: 20 minutes | Cooking time: 15 minutes | Serves 3

2 tablespoons olive oil

1 large onion, diced

1 teaspoon cumin

2 tablespoons minced garlic (or 3 crushed cloves)

1 tablespoon turmeric

1 large teaspoon garam masala

1 small chilli, chopped

2 cans diced tomato

2 tablespoons tomato paste

1 can chickpeas (drained)

1 can light coconut milk
-
½ chopped purple cabbage

1 cup whole grain rice
METHOD
In a large pot cook olive oil, onion, spices, garlic, cabbage and chickpeas. Once partly cooked through add in tomato paste and canned tomato and let simmer. Then add in coconut milk and leave on low till fully cooked through, stirring occasionally. Cook rice to preference and serve on the side.
