A fantastic vegan version of a potato salad. With the high protein vegan mayonnaise, you can enjoy it as a dish on its own or alternatively as a side. A great option to bring along to a potluck!

 

RECIPE

Preparation: 10 minutes | Cooking time: 30-40 minutes + cooling time in fridge | Serves 3 as a main or 5 as a side

 

  • 400g potatoes

  • 200g parsnips

  • 100g brussel sprouts

     

VEGAN MAYONNAISE
  • 400g silken tofu
  • 2 tablespoons nutritional yeast
  • Splash nut milk 
  • 1 tablespoon lemon juice
  • 1 tablespoon (or to taste) mustard powder / mustard
  • 1 large dollop pure maple syrup
