A fantastic vegan version of a potato salad. With the high protein vegan mayonnaise, you can enjoy it as a dish on its own or alternatively as a side. A great option to bring along to a potluck!

400g potatoes

200g parsnips

100g brussel sprouts
 
VEGAN MAYONNAISE

400g silken tofu
 - 
2 tablespoons nutritional yeast
 - 
Splash nut milk
 - 
1 tablespoon lemon juice
 - 
1 tablespoon (or to taste) mustard powder / mustard
 - 
1 large dollop pure maple syrup
