One Pot Chunky Red Minestrone Soup

Preparation: 20 minutes | Cooking time: 1.5 hours | Serves 3

  • 1 whole zucchini

  • 1 whole white onion

  • 1 whole carrot

  • 3 whole capsicum

  • 1 whole bunch silverbeet

  • 300g gnocchi

  • 2 tablespoon tomato paste

  • 1 vegetable oxo cube

  • 1 can Italian crushed tomatoes

  • 1 jar dolmio 

  • 1 tablespoon garlic

  • 1/2 cup red wine

  • 1/2 sourdough fresh loaf (without the crust)

     

METHOD

Chop all vegetables and add everything into a large pot except the silverbeet and fresh loaf. Add in .5 cup of water or more for desired thickness. Let ingredients simmer for an hour and then in the last 30 minutes add silverbeet and broken up pieces of bread. Serve immediately, with a few slices of sourdough or ciabatta.
