No Fuss Crockpot Coconut Curry
A great affordable and easy option to get rid of unused vegetables that are close to going off or need to be used up. Pop it all in a crock pot and carry on! Perfect way to end the week close to your next grocery visit, or if you want a no fuss meal.
RECIPE
Preparation: 5-10 minutes | Cooking time: 1-2 hours | Serves 4

Leftover veggies , (broccoli stalks, zucchini, capsicum, onion, and carrot)

1 can coconut cream (can substitute for coconut milk)

1 can chickpeas or 300-400g

2 tablespoons yellow curry paste

1 tablespoon vegetable stock season (or two oxo cubes)

200g tomato pasta sauce (e.g. dolmio)
METHOD
Chop up veggies and put everything in a crockpot on high and leave it be. Pop the crockpot on high for 1 hour or low for 1.5-2 hours.
