Ginger Slice

Preparation: 20 minutes | Cooking time: 15-20 minutes | Serves 9

 

  • 2 tablespoon crushed ginger

  • ¾ cup chickpea flour

  • ¾ cup self-raising flour

  • 1 pinch of salt

  • 3 tablespoon coconut sugar

  • ½ cup vegan butter

  • 1 tablespoon pure maple syrup

     

METHOD

Lightly melt butter and mix sugar, crushed ginger, and syrup well together. In a separate bowl mix the rest of the dry ingredients and then add both wet and dry ingredients together. The mixture should resemble a moist crumble. Line a baking tray with baking paper and press the crust down to create the base. Press well. Bake lightly for 15-20 minutes at 180 degrees. Let cool before adding the top.
