Couscous Salad
Packed with fibre and nutrients to keep you fuelled throughout the day

½ cup uncooked couscous

1 cup water

½ avocado
-
½ red bell pepper
-
½ cucumber
METHOD
Cook cous cous to your liking (I do mine on stove top with double the water of the cous cous, bring to the boil, then take off the heat and let it sit with lid on till cooked through). Once cooled, add ingredients to the cous cous and serve with apricot or capsicum salad dressing (see sides).
